The hotel’s restaurant, Scout, bumping at all hours, serves an incredible breakfast and the best avocado toast I’ve ever had, and the panoramic rooftop lounge the Nest serves the trendiest cocktails you’ll find in Seattle – in flamingo punch bowls, no less. Insider tip: Go early to The Nest since it’s often busy (and is usually standing room only, since it’s so popular).
